Abstract. The new way of dielectric properties resonant method measurements data processing of the frozen biological tissues at temperatures ranging from –20 to –1°C in the frequency band of 100–200 MHz under phase transition is discussed. This technique is based on the cavity R/Q ratio computation with the 3D electromagnetic code. The additional calibration dielectric in this method is not necessary. The resonant frequency perturbation may be up to 100 %. The compare of the frozen biological tissues dielectric properties determination accuracy with the other method was carried out.

Key words: frozen biological tissue, phase transitions, dielectric constant, dielectric losses tangent angle, electromagnetic waves, very high frequencies, measuring cell, cavity, R/Q ratio, 3D simulation.

Financing: Investigation was carried out as part of the State Assignment of the V.M. Gorbatov Federal Research Center for Food Systems of the RAS No. FGUS-2025-0004.
